Green Beans & Bacon
My green beans and bacon recipe is super easy and very delicious. I start with fresh green beans from my Front Door Produce vegetable delivery box. To prep your green beans you will first need to rinse them under running water and then snap the ends off of each bean. Bring a large pot of water to a boil (I salt my water) and drop your prepped green beans in to blanch. Go ahead and create an ice water bath because the blanching will not take long. Once your green beans are bright green in color you can remove them from the boiling water into the ice bath. Your beans should still have a nice crunch and freshness to them if you have done this correctly.
While the green beans are in their ice bath, cut up bacon into small bite size pieces and place in a frying pan to brown. Once the bacon is brown, place the cooked bacon on a paper towel to cool. Using the bacon grease in the frying pan, sauté a sweet onion and minced garlic (Use 1 small onion and about 4 pods of garlic). I let my onions and garlic cook on low to medium heat until they are brown and caramelized. I then take the green beans from the water bath and dry them on a paper towel. Then put your dry green beans in the frying pan with the caramelized onions and garlic.
Next I take half a lemon and squeeze the fresh juice into the frying pan over all of the ingredients. Take your red pepper flakes and salt and pepper to taste. At the end I add the cooked bacon back on top and make sure everything is heated through. That's it!!! I serve this dish with pork chops and mashed potatoes and it is my families favorite Sunday lunch.

1 pound Fresh Green Beans
1 Sweet Onion, sliced
4 Pods of Garlic, minced
6 Pieces of Bacon, cubed
Salt/Pepper to taste
1 Tsp Red Pepper Flakes
Fresh Lemon Juice
