Bell peppers are actually a fruit, not a vegetable as they have seeds that come from flowering plants. Bell peppers are the only peppers that do not produce capsaicin, the chemical that causes the heat in all other peppers. Did you know that bell peppers have more levels of Vitamin C than any other produce item - at least 3 times more than an orange.  
Bell peppers come in a variety of colors including green, red, yellow and orange and can be eaten at any stage in development. Of these colors, red bell peppers are the sweetest.  Some of our favorite ways to enjoy bell peppers are cut up raw on salads, baked with ground beef and cheese and blackened on the grill.
